Why Jersey milk?
Because it is the richest cows milk and is delivered in fresh from a neighbour.
Why fresh local double cream and local free range eggs?
Because they taste better and involve few food miles.
Why unrefined cane sugar?
Because it is a natural sugar grown in the tropics containing mainly sunshine. And it has a good fruity taste.
Why skimmed milk powder?
Because it balances the ingredients in a way which is a legal requirement to use the name “ice cream” in the UK
Why use water from your own spring for the sorbets?
It is sweet, clear mineral water with no chemicals and involves zero food miles.
Why don’t you use additives?
Because they spoil the taste of the product. Alginates and diglycerides coat the mouth and leave an aftertaste; guar gum, carageenum, xanthan gum etc leave a gluey taste. None of these has any place in a proper ice cream or sorbet.
